100% Carignan from 40-year-old vines, grown organically and harvested by hand. Naturally vinified without additives: fully destemmed, the berries are placed in vats without crushing for a gentle maceration process lasting 7 days at 18°C. Gentle pressing, the juice is then aged in stainless steel vats for 8 months. It was bottled at the estate in April 2024 without fining or filtration, with only a micro-dose of sulfur (0.3 gr/hl) added before bottling, undetectable in laboratory analyses due to the very low amounts.
