Les Fagnes Rouge - 2020 - Sylvain Boutée
Clos des Boutes
Les Fagnes is the native region of Sylvain's family in Belgium, a fitting name for this southern cuvée with uncommon freshness! A nose of prune, blackberry jam, and sweet spices. The palate is full-bodied and luscious, with lovely roundness, and silky tannins.

Blend: 70% Carignan and 30% Syrah from vineyards farmed biodynamically and planted on Villafranchian soils (ancient sands and limestone) in the commune of Bellegarde, in the Gard. The grapes are harvested by hand using 15 kg crates, with yields kept under control. Vinification: full destemming, co-maceration of the two grape varieties for 15 days, fermentation with indigenous yeasts, gentle pressing, 12 months of maturation in 15-hectolitre casks that have seen several wines. Neither fined nor filtered, and just a microdose of sulphur.
