Raspberry, blackcurrant, almost like grenadine for adults... Palate: an elegant wine, with lively and fine bubbles, with some lovely pep brought by the acidity, and a red berry finish. Les Safres is the name for the type of soil found around the Houillon estate.

100% Grenache Noir from 40- to 50-year-old vines, farmed organically and planted on red soils with pebbles. The grapes are harvested by hand. Vinification: whole grape bunches are macerated for two weeks, followed by gentle pressing, maturation in stainless steel vats, and the addition of 4 bars of CO2 in the vat to create the bubbles (unlike a pét-nat or natural sparkling wine, here the effervescence is created in the vat, using the Charmat method). Bottled on the 7th of June 2021, without fining or filtration, and without added sulphites.

Charlotte and Aurélien Houillon… their name may ring a bell! Aurélien is none other than the brother of Emmanuel Houillon, and like him was initiated into the secrets of the vine and natural wine by Pierre Overnoy, and took part in the adventure of his famous Pupillin estate.
