Blend: 70% Grenache Noir and 30% Syrah from old vines farmed organically and planted on slightly sandy clay-limestone soils. Hand-harvested with low yields: 19 hl/ha. Natural vinification: 100% destemmed, 10 weeks of maceration in stainless steel tanks, with only the press juice used in this cuvée (it’s the “sister” cuvée to Canne, which contains only the free-run juice). Aged in barrels that have seen several wines, bottled at the Domaine without fining or filtration, no added sulfur.

Charlotte and Aurélien Houillon… their name may ring a bell! Aurélien is none other than the brother of Emmanuel Houillon, and like him was initiated into the secrets of the vine and natural wine by Pierre Overnoy, and took part in the adventure of his famous Pupillin estate. The savoir-faire instilled in him would then be put into practice elsewhere and upon other grape varieties, notably...
