Domaine de la Combe au Mas
A nose of blackberries and small black fruit, with notes of laurel... “Souvage” means ‘wild’ in Provencal, but the palate here is not as savage as the name suggests! This velvety juice, with well-blended tannins, is a dry wine of course, but tastes as sweet as a little bonbon – a delicacy.

A cuvée made from grape vines in their wild state: no human intervention on the plant for several years, no pruning, no ploughing of the white clay soils. Some of the vines have become creepers again, growing up into nearby trees. Yields are miniscule: 5 hl/ha! The grapes (about 1/3 Cinsault, 1/3 Syrah, 1/3 Carignan) are completely destemmed, crushed by traditional foot treading, and pressed manually in an old vertical wooden press, with no temperature control or use of electricity during vinification. Matured in vats, with a microdose of sulphur.
