First vintage for this 100% Syrah from 40-year-old vines grown organically and planted on several small plots at an altitude of 400 meters, on clay-limestone soils. Manual harvest. Natural vinification: total destemming, one month of maceration with little extraction, six months of aging in century-old terracotta amphorae from 2000 to 4000 liters. Bottled in Spring, without fining or filtration, just a tiny pinch of sulfur.
