Fleur de Cailloux - 2023 - Jean Philippe Padié
Domaine Padié
Always as delicious, and so perfectly named : Fleur de Cailloux means “Flower of Stones” in French... Pure minerality! Citrus, stone, lemon blossom… A dry, taut, razor-sharp, and mouthwatering wine. On the palate: the richness and volume of the grape varieties bring perfect balance.

A blend of 45% Grenache Blanc, 45% Maccabeu, and 10% Vermentino from vines farmed organically (certified) and biodynamically (not certified). Planted on a wide diversity of soils, with marl-limestone (70%), clay-silica (20%), and schist (10%) soils, with varied exposures. Hand-harvested, direct pressing in a pneumatic press, light cold settling, then aged for 10 months—half in 20hl and 40 hl wooden casks, and half in closed tanks. Bottled at the Domaine after a light cellulose plate filtration, with just a micro-dose of sulfur.
