Grenache Noir from a parcel selection of old vines, farmed organically with biodynamic practices, planted on blue marl soils. Hand-harvested in crates. Vinification: 15 days of whole cluster maceration, infused gently so no forced extraction, in 27 hl concrete tanks. Soft pneumatic pressing, aged in 15 hl casks over winter, then in stainless steel tanks in spring. Bottled at the Domaine, without fining, lightly filtered on cellulose plates, with just a micro-dose of sulfur before bottling.
Jean Philippe Padié
Jean-Philippe Padié is an unmissable Roussillon winemaker. After studying at the Montpellier School of Agronomy, he trained and worked alongside Gauby and Mas Amiel, very famous estates in Roussillon and in Domaine Plageoles in Gaillac.
