A blend of 70% Grenache Gris and 30% Macabeu from century-old vines planted at 400 meters altitude on schist soils, surrounded by garrigue. The estate is certified organic and uses biodynamic farming techniques. Vinification: vertical pressing, fermentation with indigenous yeasts, fermented and matured for 10 months in 2100-litre demi-muid barrels. Unfiltered, unfined, bottles at the estate without the addition of sulfites.

Tom Lubbe
Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa.
