A Côtes Catalanes wine, a blend of Grenache Noir and Carignan from old vines (30 to 95 years old), grown biodynamically and planted on soils of limestone marl. The Gaubys are also adepts of polyculture, which they use to recreate biodiversity around their vines. Vinification: maceration of whole bunches for 15 days in cement vats, indigenous yeasts. 14 months of aging in casks and vats. Bottled by gravity, without fining or filtration.
