Carignan from a parcel selection of old vines, 90% planted on limestone marl and 10% on schist. The vines are organically farmed with biodynamic practices and hand-harvested. Vinification: 15 days of whole cluster maceration, no pump-overs or punch-downs, in 27 hl concrete tanks. Gentle pneumatic pressing, aged in demi-muids and amphorae over winter, then blended and end of aging in casks. Bottled after light plate filtration, with just a micro-dose of sulfur.

Jean-Philippe Padié is an unmissable Roussillon winemaker. After studying at the Montpellier School of Agronomy, he trained and worked alongside Gauby and Mas Amiel, very famous estates in Roussillon and in Domaine Plageoles in Gaillac.
