A blend of Carignan and Mourvèdre from organic, biodynamic vines planted at an altitude of 700 meters on black marl terraces. Hand-harvested and naturally vinified: direct, gentle pressing, aged in concrete vats. Bottled on the estate with a cap, as 4 grams per liter of residual sugar remained at bottling, but the sugars have since been digested by the wine. Unfiltered, unfined, zero added sulfur!

Tom Lubbe
Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa. After starting out small, the estate would slowly grow in size. Tom would acquire old, high altitude parcels where he produces...
