70% Maccabeu, 20% Grenache blanc and Grenache gris, 10% Tourbat, from vines grown organically and planted on 70% clay-limestone and 30% clay-siliceous soils, with different exposures. Manual harvest in small crates. Vinification: direct pressing in a pneumatic press, light cold settling, aging for 10 months in stainless steel vats. No fining, light filtration on a cellulose plate and a micro-dose of sulphur before bottling.

Jean-Philippe Padié is an unmissable Roussillon winemaker. After studying at the Montpellier School of Agronomy, he trained and worked alongside Gauby and Mas Amiel, very famous estates in Roussillon and in Domaine Plageoles in Gaillac.
