An indigenous grape variety of the Maurienne Valley that had almost disappeared, it is now firmly established as one of the essential indigenous varieties of Savoie. We love its duality, between blackcurrant and redcurrant, and its complex structure make it a wine to be laid down.

100% Persan from organically grown vines with biodynamic methods, planted in 2017 on a West-facing clay-limestone slope at the edge of the village of Le Viviers. Harvesting by hand during the second half of September, with berries sorted by hand. Vinification: total de-stemming, 7 to 10 days of maceration, gentle pressing, 12 months of aging in vats and amphorae. Bottled at the estate on a favorable moon, without fining or filtration, just a micro-dose of sulfur.
