A cuvée produced from grapes grown on the estate, certified organic and Nature et Progrès: a blend of 60% Poulsard, 20% Gamay, 10% Mondeuse and 10% Pinot Noir. Harvesting was done by hand. Vinification: total de-stemming, very long maceration of the berries for 7 months, in qvevris, these large Georgian terracotta amphorae buried in the soil. Gentle pressing, a few months of ageing before bottling at the estate in July 2023. Unfined and unfiltered, with no added sulfites.
