100% Pinot Noir from organically farmed vines planted on small pebbles over decomposed granite in Hemel-en-Aarde. The Ignis parcel faces north. Hand-harvested, destemmed, 10-day cold soak in open vats, native yeast fermentation, pressed in a traditional wooden vertical press, aged 11 months in French oak barrels (30% new). Unfiltered, unfined, minimal sulfites.
