100% Pinot Noir, from vines planted in 2009, farmed using sustainable agriculture and planted on an east-facing sloping parcel of land with poor, stony soil, with the presence of clay and schist. The grapes are harvested by hand, destemmed, and cold macerated 28 days in open vats, followed by fermentation with indigenous yeasts, pressing in a traditional wooden vertical press, and 11 months of maturation in French oak barrels (from François Frères) with 27% new oak. Neither filtered nor fined, with sensible use of sulphites.
