One of our favorite cuvées during tasting, a super aromatic natural sparkling wine. Nose carried by notes of exotic fruits and citrus fruits, lovely floral bouquet. Lively bubbles and nice length. To be served chilled whenever it feels like summer.

A blend of Petit Manseng and Gros Manseng, from 10-year-old vines grown biodynamically (certified by Demeter), and planted on top of the hills, at 350 meters above sea level, on Kimmeridgian limestone. Manual harvest. Natural vinification: direct pressing, with some of the grapes previously destemmed. Long fermentation during 12 months, in barrels that have seen several wines. 6 months of aging on laths, disgorged. Unfined, unfiltered, no added sulfites.

Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
