A blend of 60% Merlot, 30% Cabernet Sauvignon and 10% Cabernet Franc, from vines farmed organically and planted on deep white clay and flint soils. The grapes were harvested by hand, with yields of 40 hl/ha. Vinification is done gently and naturally: 3 to 4 weeks of infusion, 12 months of maturation in 600-litre muid barrels that have seen several wines, then a 4-month period in stainless steel tanks. Neither fined nor filtered, no added sulfites.
