100% Malbec from 40-year-old vines on average, farmed biodynamically (Demeter certified) and planted at 350 meters on the high-altitude slopes of Cahors. Soils are rich in iron-laced limestone and river deposits from the Massif Central. Hand-harvested and naturally vinified: total destemming, 30 days of maceration in concrete tanks, and 18 months of aging in large foudres. Bottled at the Domaine without fining, filtration, or added sulfites.

Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
