A red Gaillac cuvée, made from the following grape varieties: 40% Braucol, 30% Duras and 30% Syrah. The vines are 20 to 50 years old, farmed biodynamically, certified organic and biodynamic by Demeter, and planted on a limestone plateau. Manual harvest, the vinification is natural, without additives, but Patrice didn't tell much about his secret recipes : maceration for about 15 days, maturation in vats, blending of free run and press wine. Neither filtered nor fined, and zero added sulphur.
