100% Chenin from 20-year-old vines farmed organically and biodynamically, planted at the top of the slopes, 350 meters above sea level, on Kimmeridgian limestone soils. Hand-harvested and naturally vinified: full destemming, berry maceration in 800-liter amphorae, then gentle pressing, followed by aging in the same amphorae for nearly a year. Bottled at the estate without fining or filtration, no added sulfites.

Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
