Malbec and Muscat of Hambourg, sourced from an average of 30-year-old vines farmed organically and planted across several plots with clay-limestone soils. Handpicked grapes and natural winemaking: a poart of direct pressing, and a part of "rosé de saignée", fermentation in stainless steel tanks, concrete tanks, and barrels. Bottled with residual sugars to create in-bottle effervescence. Aged on laths for 6 months; unfined, unfiltered, just a micro-dose of sulphur.

Fabien Jouves represents the golden generation of Cahors. This young and dynamic vigneron settled in 2006 on the highest slopes of Cahors, where he took over his family’s estate of 20 hectares.
