The Marc de Gewurztraminer is produced from the grapes of the Estate, grown biodynamically and certified by Demeter. After pressing, the marc ferments for several months in vats before proceeding to a double distillation in a wood-fired copper still. A large part of the distillations heads and tails are pull apart, in order to keep only the best part of the core. Very long aging in glass demijohns, for at least ten years, in the attics. Blend of three vintages, bottled in Spring 2021.
