Unlike Marc de Bourgogne, Fine is made from the distillation of fine wine lees, collected after the barrel rackings, here from Chardonnay, Gamay Petit Grain, and Pinot Fin. Vines average 70 years old. Distilled in a 1923 pot still that has been passed down through four generations of the Chapuis family, traveling across Burgundy to private homes and winemakers. This Fine de Bourgogne was aged for 13 years in a single 120-liter barrel, in a dry cellar, without topping up. Limited edition: only 400 bottles produced.
Julien Guillot
Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
