100% Semillon, from vines farmed organically and without irrigation, planted in Yountville in Napa Valley, at 120 metres altitude. 70% of the harvest is destemmed and macerated with the skins for 24 days, while 10% ferments in whole bunches for a fortnight, and the rest is pressed immediately. The vinification is natural and without additives, with maturation in concrete eggs, and just a microdose of sulphur at bottling.
