A blended cuvée of 60% Sauvignon and 40% Sémillon, from organic vines grown by Domaine Chillac, located in Morizès, in the Entre-deux-Mers region. Harvested by hand and naturally vinified at the Darwin urban winery, Bordeaux's alternative place on the right bank. Indigenous yeasts, maceration of the berries for six days, gentle pressing, the juice is moved into barrels for the end of fermentation and aging for 8 months, in barrels that have seen three wines. Bottled without fining or filtration, just a micro-dose of sulphur.
