A blend of 60% Sauvignon Blanc and 40% Sémillon from organic vines grown by Domaine Chillac and Domaine Chaigne in the Bordeaux region. Harvesting by hand and vinified naturally: direct pressing, indigenous yeasts, aged for 6 months in stainless-steel vats, in the Darwin winery, the alternative place on Bordeaux's right bank. Bottled without fining or filtration, just a micro-dose of sulfites.
